Mattot -the resting place and throne of the Jebena (a traditional coffee brewing pot) was derived from the Ethiopian official language Amharic. Mattot which allows brewed coffee to settle and reach it’s optimal quality level is found and used by almost every household throughout Ethiopia. Mattot Coffee, the trade name under which YAFCO Trading operates its coffee packing, Roasting and Distribution was established in late 2023. Our Coffee Experience Center and Processing facility is currently under development and is scheduled to be operational by early next year. Our Coffee Experience Center will be a hub for coffee enthusiasts to connect, share, and experience exceptional coffee blends in a cozy friendly atmosphere. Our facility will also be equipped with training center where we share our expertise in coffee roasting, brewing and cupping while continually researching and developing a higher level of coffee blends for our customers to experience.

In Ethiopia coffee drinking is an integral part of the social culture. The very unique coffee drinking ceremony, is conducted in almost all Ethiopian households which family or friends who visit one another partake in. During coffee drinking social issues and other subjects of interest are discussed.
The utensils of the coffee ceremony includes the JEBENA in which the coffee is brewed in, a Mattot where the Jebena rests on, a Rocobot where the small porcelain coffee cups are placed on ,and the “Itan” (incense ) which is burned over a hot coal giving sweet aroma.
The coffee is brewed by first roasting the green coffee beans over hot coals in a brazier. Once the beans are roasted each participat is given an opportunity to sample the aromatic smoke. This is followed by the grinding and brewing of the coffee in a “Jebena” (a traditional Ethiopian Coffee brewing Pot) After the coffee is brewed it is placed on the “Mattot” which plays and important role of allowing the coffee to settle and reach its optimal quality level. During coffee drinking .small snacks called ‘bunna kurse’ are served to the coffee drinkers.

In our Laboratory and Training Center we mainly focus on transferring our coffee expertise to coffee enthusiasts and any one who wishes to have barista roasting and cupping knowledge. In our fully equipped training center and our Coffee experts will ……
